DERBY - Eggs - good for you or bad for you? The Yale-Griffin Prevention Research Center, located at Griffin Hospital in Derby, is currently recruiting participants to help study the dietary effects of egg consumption on blood flow and the behavior of blood vessels in healthy individuals.
The USDA Egg Nutrition Center-sponsored study is designed to investigate the effects of egg consumption on vascular reactivity with implications relating to cardiovascular disease risk. According to David L. Katz, director of the Yale-Griffin Prevention Research Center: We expect to learn a great deal about the effects eggs have on blood flow in a basically healthy population. This study will help unbundle the vascular effects of eggs from those of a meal high in saturated fat. This information should be of great value in providing essential clarification to consumers concerned about dietary health and uncertain about the role of eggs in their diets.
