Hops Comes to Brass City

WATERBURY - Hops Restaurant-Bar-Brewery will open its third Connecticut location on December 4 at 495 Union Street in the Brass Mill Center. Other Connecticut Hops Restaurants are in Newington and Manchester. The Florida-based restaurant features a glass-encased copper and steel display brewery. The casual dining microbrewery features on-site hand-crafted beer. Visible from the dining room, customers can tour the microbrewery as the brew master supervises each phase of the brewing process - from grain to glass. John Pauciello, operating partner for the new restaurant, says that the location was selected because “the multi-million-dollar construction of the Brass Mill Center and the commercial and residential growth in Waterbury has helped this area become a major dining and entertainment destination.” Hops is open 11 a.m. to 11 p.m. Monday through Thursday, until midnight Friday and Saturday and until 10 p.m. Sunday.
