Uno. Dos. Tres. Quattro. Yes, there are four of them - the two male chefs and the two sisters who comprise the ownership of Quattro's in Guilford. Everything you've heard about this place is true. It is hard to get a Friday or Saturday night reservation (unless you call a number of weeks in advance) and the food is, as one well-traveled diner observed, "better than New York."
In business for three years, the 18-table restaurant features such classics as pollo Parmigiana and calamari Marinara, along with originals such as vitello Quattro, a heavenly concoction of veal (obviously) with perfectly crunchy asparagus, roasted peppers and mushrooms in a white wine sauce.
For lunch there's a selection of specialty sandwiches as well as salads, pasta and entrées. A similar but more extensive menu is offered at dinner. The list of daily specials at lunchtime was impressive (I can still taste the perfection of the sea scallops-with-shittake mushrooms appetizer). The fresh-made bread and garlic rolls served with marinated Sicilian olives are mouth-wateringly good.
The atmosphere is soft and relaxed. The wait staff are attentive but not hovering. Most dishes are cooked in a sauce and there's an emphasis on fresh tomatoes, asparagus, mushrooms, mozzarella and prosciutto. From the antipasti, brodini and insalata to the panini, pasta and pollo, vitello and bistecca, the presentation and quality are outstanding.
